Salted Toffee S'Mores Bars

Don’t be freaked out by the salt in these bars — it actually helps make the bars not so sickeningly sweet. These bars are also great with nuts — sprinkle them on when you add the toffee bits.

Ingredients
13 graham crackers
1 bag (8 ounces) toffee bits (like Heath Bar)
1/2 cup sugar
1 cup (2 sticks) unsalted butter
3/4 cup chocolate chips
¾ cup mini marshmallows
3/4 teaspoon coarse salt

Directions:
Preheat oven to 350. Line a rimmed baking sheet with foil, making sure the whole pan is covered.

Place graham crackers in a single layer on sheet, edges touching. Sprinkle toffee bits evenly over graham crackers.

In a small saucepan, bring sugar and butter to a boil over medium-high. Reduce heat and cook at a rapid simmer, swirling pan occasionally, until mixture is kind of foamy and syrupy, about 2 minutes. Pour the melted butter mixture over graham crackers as evenly as you can—be careful: this stuff is HOT!

Bake until the toffee/sugar topping is bubbling, about 12 minutes. Remove the pan from oven and immediately sprinkle chocolate and marshmallows over the top (they’ll start to melt right away). While it’s still hot, use a pizza cutter to cut it into 2-inch squares. Let it cool completely in the pan on a wire rack, then enjoy.

Peppermint Fudge

This is basically the easiest recipe ever. No joke. We love the festive look of candy canes sprinkled on this fudge, but you could basically top it with in anything you like — nuts, mini-marshmallows, broken-up Heath Bars, you name it!

Ingredients:
3 cups semi-sweet chocolate chips
1 can sweetened condensed milk (NOT evaporated milk!)
Pinch of salt
1 1/2 teaspoons vanilla extract
2 candy canes

Directions:
Line 8- or 9-inch square pan with foil, extending foil over edges of pan.

Combine chocolate chips with sweetened condensed milk and salt in microwave-safe bowl. Cook on for about 1 1/2 minutes. Take the bowl out (carefully! It’s hot!) and stir. Microwave until completely smooth, about another minute more. Stir in the vanilla extract. Spread the chocolate mixture into the prepared pan.

Put the candy canes in a big, zip-top bag. Use a flat-head screwdriver to break them up into ¼-inch pieces (a screwdriver helps you get prettier pieces—not just a powdery mess!). Sprinkle the candy canes over the chocolate, while it’s still warm.

Chill the fudge for 2 hours or until firm. Remove from pan by lifting edges of foil. Cut into squares and eat!
