Ingredients:
2 cups white chocolate, melted
2 cups heavy cream
1/3 cup sugar
1 cup fresh cranberries
3 tablespoons sugar, for the compote
Splash of water

White chocolate glaze
Sugared cranberries, for garnish
Directions:
1. To make the cranberry compote, place the cranberries, 3 tablespoons sugar, and a small splash of water in a saucepan.
2. Cook over medium heat for 8 to 10 minutes, stirring now and then, until the cranberries burst and the mixture becomes thick. Set aside to cool.
3. To make the mousse, whip the heavy cream with the sugar until stiff peaks form.
4. Gently fold the melted white chocolate into the whipped cream until smooth and well combined.
5. Spoon or pipe the mousse into dome molds.
6. Add a small spoonful of cranberry compote in the center of each mold.
7. Press a sponge cake round onto the base of each dome to seal it.
8. Freeze the domes for at least 4 hours, or until they are completely firm.
9. Unmold the domes and pour the white chocolate glaze over the top.
10. Finish with sugared cranberries for a festive holiday presentation.
11. Store in the freezer for up to 1 month. Before serving, let thaw for about 20 minutes.
