Crispy, golden, and built for a perfect bite.

Our Crispy Grouper Sandwich features fresh grouper coated in coconut-panko, fried to perfection, and served on toasted brioche with St. Elmo Tartar Sauce. It’s just as good for a casual lunch as it is sliced “party cut” for entertaining.

Quick recipe
• Cut grouper into portions and pat dry
• Dredge in flour → egg → coconut + panko (season each layer)
• Fry in ~½ inch oil, 3–4 mins per side until golden
• Serve on toasted brioche with tartar sauce

Tip: This works great with cod, mahi, snapper, or any mild white fish.

St. Elmo Spicy Pimento Cheese, made with sharp cheddar, sweet pimentos, and a kick of horseradish, sets the stage for the ultimate watch party spread.

Ingredients

2 cups sharp cheddar cheese, freshly grated
2 cups white cheddar cheese, freshly grated
½ cup mayonnaise
4 oz cream cheese, softened
4 oz diced pimentos, drained
2 tablespoons St. Elmo Prepared Horseradish, or more to taste
¼ teaspoon garlic powder
¼ teaspoon onion powder

Instructions

1. Grate the Cheese
For the best texture and flavor, grate sharp cheddar and white cheddar from block cheese rather than using pre-shredded cheese.

2. Mix the Base
In a mixing bowl, combine the grated cheeses, mayonnaise, cream cheese, St. Elmo Prepared Horseradish, garlic powder, and onion powder. Stir until the mixture is creamy and evenly blended.

3. Fold & Chill
Gently fold in the drained pimentos. Cover and refrigerate for at least 1 hour before serving to allow the flavors to develop.
