This show is about the Texas based company that pioneered the selling of exotic wild game (venison) to restaurants across the country. In the early 80s, Broken Arrow Ranch founder, Mike Hughes was instrumental in establishing the laws that made it possible to classify and inspect non-native, exotic game for restaurant kitchens.

In this episode, I sit down at the Broken Arrow Ranch headquarters, in Ingram, Texas with current owner Chris Hughes and we chat about, harvesting versus hunting, the definition of venison, chef culture, and Napa Valley. This was a great conversation with Chris and embodies what a Tinstreamer is. They sell to 800 restaurants in all 50 states but remain relatively niche. Their customers, chefs and individuals, are fiercely loyal to the company and their wild, free roaming offerings. Broken Arrow has carved a unique place in the meat industry. They are unconventional, innovative, and strive to offer the best product possible in the most humane way. Since 1983 has charted their own path and created an industry that inspires chefs across the country. Twenty years ago, I had my first taste of axis venison from at Abacus in Dallas. That meal inspired me to eat more game, know where my food comes from, hunt for my protein, and ultimately to write this story. That’s a pretty powerful meal.

The world lost a legend. We lost a friend. Mundo was our skinner with unmatched skills for 40 years. He was also an American success story - an immigrant who thrived, raised a beautiful family with successful children, and became a bit of a real estate mogul on the side. His smile remains in my memory.
