Ya'll. We launched Primal Bayou last week. I started this project in May of 2020 after the FDA shut down our manufacturing kitchen due to covid restrictions, and I not only had the loss of income, but continued business expenses (loan, utilities, liability, permits). Even though closed, I still got up, dressed up and showed up each day, and went into the kitchen to develop recipes and ideas.
Cue the covid bout that hospitalized me in '21 and nearly took me out, a high risk pregnancy at 45, a child with a Down Syndrome diagnosis, deteriorating health/long covid/menopause and NEARLY 6 years of recipes sitting in a closed box with my handwritten label TOP SECRET on the lid. I just opened it back up this April, and continued working.
Product photos on my kitchen counter, edited by my kids, late nights learning how to make a website, and more gumbo and stew mix than I ever care to eat again while tweaking recipes by the gram.
I'm so proud of this project. I think it will help so many people gain the joie de vivre in cajun cooking that may be lost due to special diets OR a new commitment to CLEAN eating.
