I love roux season! Forget pumpkin spice! I'll take a good gumbo any day! It's my kids' favorite thing to eat and they want it for breakfast any time there are leftovers. I'm fine with that, as I know it's made with quality ingredients.

WOW! I knew it! I had been feeling like i should offer an AIP roux for a long time, but I didnt realize we would SELL OUT in the first week! How/why is this roux different from the paleo roux? The elimination of tree nuts. But, why?
Tree nuts are one of the most allergenic foods, with true allergies estimated at about 1% of the total population and some studies showing that nut intolerance (meaning the body produces IgG antibodies against proteins in nuts) may affect a whopping 20 to 50% of us.

People suffering with autoimmune diseases are already in a chronic inflamed state. People with autoimmune disease are more likely to test positive on food intolerance panels than healthy people. The AIP diet eliminates nuts in an effort to control inflammation and help the body heal.
