Here are a couple of the fun and hard to find plants we have for sale at our plant nursery near Glover, Vermont: Variegated horseradish (Armoracia rusticana 'Variegata') and dwarf yellow comfrey (Symphytum grandiflorum). The horseradish can be eaten, just like any other variety, and is best harvested in the fall. It takes 2-3 years to obtain the best variegation, so if you want to experience the pretty foliage wait a few years to harvest it. The comfrey is a miniature variety that makes a nice ornamental ground cover in sun or shade. It spreads, but not aggressively, and also attracts bees.
