This weekend, is headed to Arizona with Simply Bread to spend three days inside for this summer’s first Artisan Sourdough Intensive 🥖

We’ll be stepping into full days of production and shaping alongside the Proof team. We’ll learn their naturally leavened croissant process and visit the farmers market. Jon and Amanda built Proof Bread from a garage bakery into a thriving business with five locations, a flour mill, and nearly 100 employees.

Growing a bakery like this requires hundreds of decisions about production, staffing, sales, leadership, profitability, and everything in between. Throughout the intensive, participants discuss the lessons learned while building Proof Bread and the decisions that continue to guide its future.

The best part about milestones is that they give us a chance to pause and appreciate just how far we’ve come.

Today, we’re celebrating 6 whole months alongside and sharing her reflection exactly as she wrote it. We couldn’t say it better ourselves. 💛

One year ago, Alexa made a decision that changed the course of her life.

Today, she’s celebrating a milestone that represents far more than a year in business. It’s the result of hundreds of early mornings, difficult decisions, lessons learned, risks taken, and the determination to keep moving forward.

One of the things we love most about the baking community is getting to witness moments like this. Behind every bakery is a story, and we’re grateful Alexa chose to share hers with us!

When you’re the baker, dishwasher, bookkeeper, photographer, social media manager, delivery driver, customer service department, and owner all at the same time... some days call for a little extra support. 💪

shares his creative twist on focaccia in the USA/ Simply Bread 20x20 Pans. It’s a stunning baked brie focaccia board complete with charcuterie compartments, snacks, and fresh-baked cookies for dessert.

Here’s what he had to say:

“We hosted a little get-together this weekend, so I decided to have some fun with the focaccia pans from . The idea was simple: bake a giant focaccia board with a wheel of brie in the centre and compartments for olives, charcuterie, and all the snacks. Add a few dozen chocolate chip cookies for dessert and you’ve got yourself a pretty good party. One of the things I love about these pans is how versatile they are. They’re great for traditional focaccia, but they’re also perfect for projects like this when you want to get a little creative. We baked everything in our Simply Bread Oven, which has become my oven of choice for both the micro bakery and entertaining at home.”

Sourdough Thin Mint Copycat Cookies
After a few rounds of testing, landed on this sourdough Thin Mint copycat recipe.

These cookies bake up crisp, hold their snap after being coated in chocolate, and have just enough peppermint to remind you of the original without overpowering the chocolate💪🏻

Yield: 48 cookies using a 2-inch cutter
Recipe:

150g AP flour
23g black cocoa
20g cocoa powder
114g butter
97g sugar
43g sourdough discard
1 egg yolk
2g salt
1g baking soda
3g vanilla
0.6–1g peppermint extract (or drops)

Chocolate Coating:
200–250g good quality dark chocolate
100–150g good quality semi-sweet chocolate
2–4 drops peppermint extract
Small amount of coconut oil, as needed

Method:
Cream together the butter, sugar, and half the cocoa powder. Add the sourdough discard, egg yolk, vanilla, and peppermint extract and mix until smooth. Add the remaining ingredients, including the rest of the cocoa powder, and mix until a soft chocolate dough forms.

Roll the dough to about 1/8 inch thick and cut into rounds. Place onto a baking sheet or, if baking in the Simply Bread Oven, bake directly on a mat placed on the stones. Bake at 340°F for 10–12 minutes until crisp, then allow the cookies to cool completely.

Melt the chocolate, a small amount of coconut oil, and peppermint extract until smooth. Dip each cookie into the chocolate coating and place on a lined tray. Chill until the chocolate is fully set.

Store them in the freezer and enjoy straight from frozen for the best texture.

What started as a way to pay an unexpected power bill has grown into a thriving family bakery.

recently shared the story behind adding a second oven:

“Second Oven

I am so excited to add a second oven in my small bakery
When we started there was never an idea of a bakery in my house. We only sold our first bread to pay an extremely high power bill from Duke Power during December.

We had a $1200 bill to pay in December or Duke Power was going to turn the power off 3 days before Christmas. At that time we had already been paid everything we were going to make that month.
Listen to how good our God is....

My husband took a picture of one of my sandwich breads in a nice Christmas bag in front of the Christmas tree and posted it online for sale for $10.... We sold 120 of them that one month and paid our power bill to keep the lights on for Christmas.

Next month in January I had no expectations of selling any more but people asked if they could get it again.... And again.... And again.
Now we pay every bill we have by selling bread, we are able to work from home, and homeschool our kids. It is hard work and it is not glamorous but it is everything we always wanted.”
