Garlic Ginger Hake!
Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 50 minutes
Yield: 1 dish
Serving Size: 1 piece of fish and 1/4 cup rice

A simple and highly flavorful dish. The hake with garlic and ginger sauce is a surefire winner.
Ingredients•1 8oz piece hake
•1/3 cup vermouth
•3 tbsp soy sauce
•2 tbsp sesame chili oil
•2 tsp fish sauce
•3 cloves garlic
•1 1 inch piece of ginger
•1/2 lime juiced
•1/2 cup brown rice
•1 cup water
•1 tsp peanut oil
•1/2 cup bamboo shoots in chili oil
•1 handful cilantro
•Fried shallots (garnish)
•pinch of salt

Instructions1.Put water in a small saucepan and bring to a boil. Add rice, peanut oil and salt. Cover and lower heat. Simmer 30-40 mins until rice absorbs water.
2.Press garlic and grate gingerroot and add to a bowl. Add in vermouth, chili oil, soy sauce, fish sauce, lime juice and a little minced cilantro. Whisk to combine.
3.Put the fish in a small casserole pour the liquid mixture over it. Allow to sit for 20 minutes.
4.Heat oven to 400.

PARMESAN CRUSTED HAKE FISH (EASY AND FAST)
Ingredients (serves 4)
•1/2 cup fresh multi-grain breadcrumbs
•1/4 cup flat-leaf parsley leaves, finely chopped
•1/3 cup finely grated parmesan cheese
•1 teaspoon finely grated lemon rind
•1 teaspoon olive oil
•4 (about 200g each) thick white fish steaks (such as Hake Fish)Sold at Costco or walmart
•olive oil cooking spray
•steamed green beans, boiled chat potatoes and lemon wedges, to serve


Method
1.Preheat oven to 200°C. Combine breadcrumbs, parsley, parmesan, lemon rind, and salt and pepper in a bowl. Stir to combine. Drizzle mixture with oil. Stir until breadcrumbs are coated in oil.
2.Press breadcrumb mixture onto flesh-side of hake fish fillets to form an even topping.
3.Place fish, skin-side down, onto a baking tray. Spray with oil. Bake for 15 minutes or until crumbs are light golden and fish is just cooked through. Serve with steamed beans, potatoes and lemon wedges.

Today is a great day for fish, go to your nearest Costco or walmart and try this WILD CAUGHT FRESH FISH, yes it's not farm raised. Cost just the same too. Plus very low mercury, so pregnant women can eat it 2x a week. I will post an amazing recipe above to try it.
