18. Cover with plastic wrap and let sit at room temperature for 24 hours.

Let’s make FETA
Part 1 of 3
Day 1

Mild Feta Cheese

Ingredients

* 1 gallon whole milk (Braum’s)
* ⅛ tsp calcium chloride
* 2 oz cultured buttermilk (4 Tbsp) OR 1 packet mesophilic starter culture
* ¼ tablet rennet OR ¼ tsp liquid rennet dissolved in ¼ cup non-chlorinated water
* 2–3 Tbsp cheese salt (or sea salt)

Day 1

1. Heat the Milk

Warm milk to 93°F, then turn off heat.

2. Add Calcium Chloride

Add calcium chloride and mix thoroughly.

3. Add Culture

* Stir in cultured buttermilk OR
* Sprinkle mesophilic starter over the surface and allow to hydrate for 2 minutes before stirring.

4. Ripen the Milk

Cover pot and let sit for 1 hour.
Stir every 10 minutes using an up-and-down motion.

5. Check Temperature

If needed, bring milk back to 93°F.

6. Add Rennet

Stir dissolved rennet into milk:

* 1 minute for high-fat milk (8–10%)
* 30 seconds for low-fat milk (3–5%)

7. Coagulate

Cover pot and let sit undisturbed for 45 minutes.

DO NOT DISTURB!

8. Check for a Clean Break

Test for a clean break.

If needed, continue checking every 15 minutes until a clean or soft break is achieved.

Note: If the rennet has not set the milk after 90 minutes, consider it a failed set and use a cheese-flop recipe to salvage the milk.
