Well. That was a Saturday.

We sold out of Traditional, Jalapeño Cheddar, Tailgater, and Cheddar brats at the Oconomowoc Farmers Market. Hot brats off the grill were gone before we were ready for them to be.

This is what happens when good pork finds good people. We love this community.

Most brats come from commercial hogs raised in confinement, processed fast, and built for shelf life - not flavor.

Berkshire is a heritage breed. Older genetics, different muscle composition, more intramuscular fat. It's why the meat is darker, richer, and actually tastes like something.

Ours are raised on pasture in Ixonia, WI. They move around. They eat right. They're processed by a local butcher who still does things the traditional way.

Does it cost more than a commercial pork 6-pack, yep - a little. But once you've had one you kind of stop comparing.

Here's the short version of what "pasture-raised" actually means for us.

Our Berkshire pigs live outside. They root around. They move. They eat what pigs are supposed to eat, in Ixonia, WI, on land we know.

That's it. No confinement. No shortcuts.

It makes a difference in the meat - in the fat, the flavor, the texture. Berkshire pork is already a cut above. Raising it right makes it something else entirely.

That's what's in your pack of brats (or chops, bacon, etc). Just so you know.

Good Saturday. Really good Saturday.

We debuted the Tailgater brat this weekend at the Oconomowoc Farmers Market and the response was good. Many were sampling and buying - that's a good sign to us.

That energy - that's what we show up for. Thanks to everyone who stopped by, tried something new, and spread the word. You're the reason we do this.

Reminder, no market for us this Saturday. We'll see you the next Saturday (May 30th) 8–12 - or catch us at the Lake Mills Market this Wed from 2-6pm.
