If you haven’t tried Amberjack before, this is a good one to start with. It has a mild flavor, firm texture, and holds up really well on the grill.

Keep it simple: olive oil, salt, pepper, a little garlic, then grill or pan-sear until just cooked through. Finish with fresh lemon.
