Sooooo I’ve been asked who are the famous Jordan Nachos named after I serve at concessions??

Well they are after our babyboy Jordan (J-ROC)..yesterday I was able to get a few picks of some of the many people who purchased them..

What is a Jordan Nacho?
Its a Loaded Nacho Bowl with 1 full Grilled Chicken Skewer/ Beef / Bacon (Bacon is optional for those not wanting pork)

We have 1 last home game coming up this Saturday vs Sweetwater..Come see what everyone is talking about yourself…

When it comes to weddings..I tell all my clients.. pick what YOU WANT..there is no right or wrong menu selection. At the end of the day it’s your budget. I may be wrong for telling my clients that but so often we get caught up in feeding the multitude and wanting them to be full instead of being realistic and understanding that you are NOT suppose to leave a wedding full and its purpose is intended to provide a snack, appetizer, or meal to hold guests over until conclusion of their ceremony.

And especially when half your guests won’t even bring a gift. So stop spending money outside of your budget and limits if applicable. Now as a chef a will make peanut butter sandwiches all the way to lobster tails and escargot if you want. I just want people to get out of the mindset of “traditional” foods and menu selections. It’s YOUR WEDDING..so the menu selections are YOUR choices.

There is a difference between “Leadership” & “Management “

Leadership-To influence people’s behavior in order to get them to perform at their highest level independently OR as a team.

Management-Making use of available resources to get the job done quickly AND efficiently with the highest level of quality

Leadership roles are similar to cheerleaders..they have vision, their ethical, can communicate clear goals to team/staff, have the ability to develop/train team members skills, competent, willing to continue their own education in their respective field/career, and conduct themselves in responsible manner to name a few..

Just because you are in Management role doesn’t mean you have the attributes of being a great leader. Anyone can be a manager. There are distinct things that separate leaders from the pack and their team has their full support.

Understand there is a difference.

Just my thought and opinion.

On today’s episode of “Cafeteria Lady, Whats for lunch?” If you truly know me..I’m a reader/researcher when it comes to food. And when I tell you.. the Food Nutrition side of cooking is NIGHT & DAY.. from being a private chef. Let me say again NIGHT & DAY. So I decided to try out a USDA recipe today for chicken salad. I excluded the celery and replaced the relish with 1 pickle spear. The kids received it well, it wasn’t a home run but about 80% liked it. I suggest if you are a food service provider looking for USDA recipes for most dishes. Not only does it give you the measurable serving sizes for all ingredients it you can also print the recipe and keep in your files for auditing purposes.

I also added fresh spinach and 1/2 boiled egg (equivalent to 1oz meat/meat alternate) to ensure the meat protein was met for all grade divisions, excluding nursery kids. There was also a Whole Wheat 1.1oz dinner roll served with lunch so they could have turned it into a sandwich while satisfying the Grain daily portion for lunch.

For approx 350 kids it requires a minimum of 44lbs of diced chicken.

So give those recipes a try. Some days you don’t want to think about what to cook and remember for anything you do there must be a recipe on file somewhere. Just FYI.
