Friends, followers, and fans: This is Alan Renfroe, husband of Elizabeth Renfroe and co-creator of Elizabeth's Gourmet Creations. You may have already heard the news but it is with great sadness that I announce my partner and wife of 25 years passed away last month. It was her dream to start this family business back in early 2017, and I am happy to announce I have made the decision to keep my wife's legacy alive and well by continuing to offer our great products. Our offerings will be scaled back a bit, but you can expect our commitment to the best quality products to continue. Our website at dipfundraisers.com has been updated with the latest information.

I totally stole this shot from my niece and didn’t even ask. 😂 Her photo is prettier than mine. I don’t drink coffee but our daughter has been making these whipped coffees a lot. Try subbing Sea Salt Caramel, Mexican Hot Chocolate, The Pie’s the Limit or Turtle Candy for the sugar in this recipe. The rest of the packet can be used for some more coffee or blended with a block of cream cheese to make a yummy bagel/toast schmear!

It’s day 25 of staying home and focusing on feeding my family creatively and deliciously while still on a budget. We bought a pack of Philly cheesesteak sliced sirloin at Sam’s recently.

I always keep peppers, sweet onions and mushrooms here for omelets, sauces, etc. so 12 portions of finely chopped sirloin for less than $12 was a chance to get creative. The meat and veggies for these sandwiches were sautéed in a combo of a little butter and our Roasted Garlic and Herb oil. I also brushed the buns with a bit of the oil before I baked them.

We fed everyone and still have 8 steak servings in the freezer. They’ll be used in soup, pasta and copycat Pell City movie-theater nachos soon.

I’ve been cooking for our family during the Quarantine. On Sundays, I try to make two meals. This is tomorrow’s pork tenderloin. Just 4 simple ingredients and no measuring!

1 package pork tenderloin
1 packet of Mexican Fiesta dip mix
1 large can green chile enchilada sauce
1 can chopped green chiles (Hatch
Green Chile if possible)

Trim pork tenderloins and sprinkle with 2 tablespoons Mexican Fiesta dip mix. Slice onion and layer the bottom of your slow cooker.

Add pork tenderloin. Pour green chile enchilada sauce and chopped green chiles over the pork. Cook in high for
5 hours or on low for 8 hours.

When it’s ready, shred the meat, serve with rice, tortillas and all the trimmings. I add the reserved Mexican Fiesta mix to a can of refried beans with 1/4 cup of shredded cheese and 2 tablespoons of sour cream. You can also add it to a can of tomatoes with green chiles to make a delicious salsa for this meal.

Tonight, we’re having Chimichurri roasted vegetables and I’m using Firecracker Ranch in my marinade for fried pork tenderloin. Everything in moderation, right?

This is a photo of ’s Black Forest Cake for Two. 26-ish years ago, I spent hours slaving over my mother’s version of the for the first meal I made for him. He looked at it and said he didn’t eat cake. I went out again with him anyway and I’m so glad I did. Poor Alan! I’ve made him taste a bite or two of a lot of those cakes over the years. He definitely loves me. Saying no to that cake has haunted him for years one bite at a time.

We are working diligently to get our current fundraising orders that have come in back to the people who have supported these amazing kids and organizations by buying our food mixes. Our in-person shows for March have been cancelled or postponed.
