I have not been in the kitchen since we made our lifestyle change. These days it's mostly fruits and vegetables. And potatoes (my addiction) are restricted from our veggie list.
Today I did a no-no. Everyone knows you don't go to the market hungry, but for me hunger can spark my culinary creativity. I wanted to stick to our new lifestyle but, I needed flavor and texture and potatoes.
I created a Bolonjay Parmesan with spinach and sun dried tomatoes, Baked Black Truffle, Parmesan Potato Thins, and Side Salad.
