Chef Instructor:
Gilly Gifford is a North West born and bred farmer and culinarian. She is a graduate of Seattle Culinary Academy and has worked with some outstanding chefs in both Seattle and Portland. While working at Lark in Seattle she had the opportunity to explore her interests in cheesemaking and curing meats at Kurtwood Farm, famous for it’s farmstead cheese among other things. Her time on the Farm led her away from the kitchen and off to the Iberian Peninsula in search of traditional cheese making and charcuterie. She settled in a small town in central Portugal with a hardworking family on a self-sustaining off the grid homestead. For two years she lived on the farm and participated in milking goats, raising pigs, harvesting olives, grinding corn and making wine, cheese and charcuterie. To complete her cheese making internship she worked at River’s Edge Chevre in Logsden, Oregon. Following that she ran the Herdshare milk program for Willow Witt Ranch. You might recognize her from running the harvest and Farmers Market for Whistling duck from 2012-2016. Currently, she is running a small-scale Charcuterie at Wooldridge Creek Winery and offering home cheesemaking and butchery/charcuterie classes privately and with the Ashland Food Co-op, teaching cooking classes for kids with Rogue Valley Farm 2 School, and spending as much time as she can out in the field with her beloved farm animals.

A winter baby is such a blessing and we have been so grateful to be able to stay cozy and warm in our farm home and get settled in as new parents. We are excited for spring and being able to share his sweet face with friends soon!

We wil be back at Ashland Rogue Valley Growers & Crafters Market starting in April with lots of fresh pastured pork, goat and chicken.

Organically fed pastured heritage pork shared available this fall!

Feed your family the best pork in the Rogue Valley. Pasture raised under the big open sky. These pigs are true free-range.

Pork is not the other white meat! Kunekune and Meishan meat from our farm will be deep pink to red, and marbled throughout with gorgeous, tasty, velvety fat. Not chewy or hard fat like grain fed pigs. The meat is rich in flavor and high in nutrients, having grown primarily on grass, whey and garden produce. The fat is nutrient dense, low in saturated fat and full of vitamins and minerals, including Vitamin D!

Our pigs are raised with mom for the first 3 months of their life and then transitioned to open pasture and forest. They enjoy sunshine, fresh air, and fresh greens every day! They feast on mixed pasture, veggies from Whistling Duck Farm, whey from Wooldridge Creamery, acorns, comfrey, fallen fruit and berries and bread from Rise Up Bakery and occasionally small amounts of organic feed. They are finished on apples and squash! This gives them a unique flavor only available on our agroforestry farm. With plenty of space to run around, these pigs taste like REAL, delicious, "old world" pork, not bland like the confined "white meat" pork at the store. Unlike commercially raised pigs, kunekunes and Meishans are a much slower maturing pig, taking up to 12 months to reach market weight, commercial pigs are usually 6 months. This is one of the reasons their meat is a delicious, rich, red marbled meat. They are known for their high quality and nutrient dense meat and healthy low saturated fat that melts at room temp.

Our pigs will be ready to go to freezer camp early winter from Oct 2024-Jan 2025.

$7.50/lb hanging weight for half a pig (about 75-100lbs), plus butcher cost

$7.00/lb hanging weight for a whole pig (about 150-200lbs), plus butcher cost
