stainable goats, pigs, chickens, ducks, turkeys and rabbits on our 6.5 acre farm in Applegate Valley. We offer on farm sales of goat milk, eggs, and meats, and soon to be fruit from our orchards. Curds My Whey is an educational resource for Home Cheesemakers, offering cheesemaking classes to the local community through the Ashland Food Co-op and private classes and curd consultation. Gilly Gifford is a North West born and bred farmer and culinarian. She is a graduate of Seattle Culinary Academy and has worked with some outstanding chefs in both Seattle and Portland. While working at Lark in Seattle she had the opportunity to explore her interests in cheesemaking and curing meats at Kurtwood Farm, famous for itโ€™s farmstead cheese among other things. Her time on the Farm led her away from the kitchen and off to the Iberian Peninsula in search of traditional cheese making and charcuterie. She settled in a small town in central Portugal with a hardworking family on a self-sustaining off the grid homestead. For two years she lived on the farm and participated in milking goats, raising pigs, harvesting olives, grinding corn and making wine, cheese and charcuterie. To complete her cheese making internship she worked at Riverโ€™s Edge Chevre in Logsden, Oregon. Following that she ran the Herdshare milk program for Willow Witt Ranch. You might recognize her from running the harvest and Farmers Market for Whistling duck from 2012-2016. Currently, she is running a small-scale Charcuterie at Wooldridge Creek Winery and offering home cheesemaking and butchery/charcuterie classes privately and with the Ashland Food Co-op, teaching cooking classes for kids with Rogue Valley Farm 2 School, and spending as much time as she can out in the field with her beloved farm animals.

Feed your family incredibly healthy pasture raised goat meat. Organically fed, no grain, just grass and brush. Goat meat is one of the healthiest meats available. Incredibly nutritionally dense and very lean. I usually compare it to buffalo meat or elk. Buying straight from the farmer is a great way to get the freshest meat and the best price possible. $8/lb hanging weight plus $100 butcher fee

These goats should be around 40-60lbs hanging. After cutting that makes about 30-45lbs of USDA frozen cuts and needs about 1/4-1/3 of a standard chest freezer.

Here is a sample of what cuts can include (you choose how to cut yours):
1 - Leg of goat
2-4 - Shanks
2 - Roasts
6-8 - Chops packs
1- Shoulder roast
2- Spare ribs
8-10 lbs ground/stew
Bones and offal (liver, heart, kidneys)

Iโ€™m happy to help you select the best cuts for the type of cooking you do or the butcher has great advice as well. If you prefer to do more Caribbean and Indian style cooking, you will want more stew, ground and braising cuts. Or if you like Middle Eastern, Mediterranean, American and Mexican style cuisine, you will want more ground, chops and roasts.
