I know this has nothing to do with food, but I do a lot of side stuff and this is one of them! So I figured I’d post it here to see if there’s anybody interested.

CRISPY CHICKEN RANCH BURGERS
1 1/2 lbs ground chicken
2 large eggs
3 Tablespoons onion, grated
2 Tablespoons parsely, chopped
1 cups cheddar cheese, finely shredded
1 (1 ounce) packet dry ranch dressing mix, divided
1/2 cup mayonnaise
salt 'n pepper to taste
1/4 teaspoon freshly ground black pepper
1/3 cup all-purpose flour

Sauce
1/2 cup mayonnaise
1/2 packet dry ranch dressing mix
1 Tablespoon fresh lemon juice
1 tsp. parsley, chopped
dash of cayenne pepper (optional)

Combine chicken, eggs, onion, parsley, cheddar, and half of ranch seasoning packet in a large bowl. Add 1/2 cup mayonnaise, salt, and pepper and stir to combine. Stir in flour, mixing until mixture comes together.

Heat 2 Tablespoons oil in a large, nonstick skillet over medium-high heat.

Working in batches, use about 1/4 cup of chicken mixture for each patty, place into hot skillet. Cook, undisturbed, until golden brown, about 4 minutes. Flip and cook until golden brown and cooked through, 3 to 4 minutes more. Repeat with remaining chicken mixture, adding oil if needed. Place cooked patties on paper towels to drain any oil.

Make sauce by combing mayonnaise and remaining ranch seasoning, lemon juice, parsley and cayenne in a small bowl until well combined. Serve chicken patties with ranch sauce on hamburger buns with any additional toppings you like. I like to use a soft potato or brioche bun
