Smoked Paprika & Shallot Charred Summer Salsa
Yield: ~2 cups | Prep time: 10 mins | Cook time: 10 mins
Ingredients:
• 1 ear sweet cream corn, kernels sliced off
• 1 cup mixed yellow & red cherry tomatoes, halved
• 1 large ripe peach, diced
• 1 large shallot, finely diced
• ½ tsp smoked paprika
• 1 tbsp extra virgin olive oil
• Juice of 1 fresh lime
• Flaky sea salt & fresh cilantro to taste
Method:
🍅Char: Heat olive oil in a cast-iron skillet over high heat. Toss in the corn kernels and cherry tomatoes. Sear for 4–5 minutes without stirring too much, until blistered and slightly charred.
