So with the proof so high and half of the batch gone, I added one gallon of Goodsprings well water and one quart of whitedog. As a note I learned that small batches need to be topped off at least bi weekly. Oops! I guess this is all part of what this page is all about. Experiment, learn, and share.

Hey everyone just an update on the Dalton Gang Single Barrel. It’s been three months since we filled the barrel with whitedog. Pulled the first sample today. Fitting it’s Memorial Day. First off I found that half of the barrel went to the angels. Proof tested out to 175 proof. And the taste has a long ways to go.

Can i have your attention please?! I said i would have some new postings coming, well today is the day. I posted some videos of my latest batch start. As you can see im not very good at this and it looks like the order of the vids got all mess up. I hope you all get the idea of what i was attempting to do. Anyway i got a new virgin white oak barrel. A 5 gallon one for a small batch. For anyone who noticed the flags in the background, I just want to let you know that NO im not a white supreminist radical. I just like flags of USA history. That flag just happened to make it in the videos.
I used a pure corn mash whitedog of 200 proof. Some of the finest shine I have ever tasted. I added a half gallon of our fine Goodsprings well water and just a dash of the Concealed Weapon 2 devils cut from the old barrel. Since we are starting it on my Son Dalton’s birthday, i think Ill call it Concealed Weapon Dalton’s batch. Now we’ll wait and let it age. First taste in about 3 to 4 months. I hope you enjoy the fun hobby of bourbon aging and tasting with me.

Well it’s been a long while since ai last posted. Just an update the last of Concealed Weapon II was recently removed which I labeled CW Devils cut and bottled. Stay tuned I just purchased a new barrel and will begin my next batch of single barrel Concealed Weapon very soon.
