French Toast(ed) is a blend of 12 to 17 year-old bourbons finished for 5 to 39 months in a variety of French oak casks with different toast levels. The blend differs from the first release of our 12 Year Bourbon finished in French Oak casks in that the barrels used were older (up to 17 years rather than 15 years) and focused primarily on Grand Chauff French oak barrels, toasted over a longer period of time using lower intensity heat. This extended toast helps develop deeper, more complex flavors while complementing the maturity of the bourbon. Other French oak casks and toast levels add additional layers and dimension to the final blend.

Why “French Toast(ed)”?

The name speaks to both the French oak finishing and the flavors that emerged from the blend. Notes of toasted brioche, vanilla custard, roasted nuts, cinnamon, clove, and crème brûlée create a profile reminiscent of French toast, rich and comforting

This release was blended differently from our first 12 Yr Bourbon Finished in French Oak release. Rather than following a formula from that release, the blend was built from the barrels that were showing their best at that moment. This vintage-like approach means each release has its own character rather than the same profile.

In 2018, we introduced our first BCS 15-Year-Old Gray Label Bourbon, later named the “Best American Wh***ey of 2018” by Fred Minnick in Forbes.

We transferred a portion of that blend into nine custom-toasted American oak barrels for further aging. Seven years later, the third of those extraordinary barrels is ready.

Tomorrow, we’re launching our 22-Year-Old Toasted Single Barrel—an exceptional bourbon shaped by expert blending, time, and a perfectly toasted barrel.

Seagrass is a blend of American and Canadian rye wh***eys, with each ingredient meticulously sourced and finished separately in Martinique Rhum, Madeira & apricot brandy barrels. It highlights the grassy oceanside notes we love in rye and the opulence and spice of finishing barrels. Each release is blended to taste and bottled at true cask strength, resulting in subtle proof variations between blends.
