During the week, it can be a challenge to get a good home cooked meal on the table for everyone. The girls get home much earlier than my husband and me, and they
are often ready for dinner the moment they get home. They can't wait for me to get home and then take another 1/2 hour to an hour to prepare a meal for them, so I decided that cooking on Sunday would be a great way to meal plan for the week and give them homemade and healthy dinners throughout the week, rather than chicken fingers, pasta and pizza every other night. By cooking most of my meals on Sundays, and sometimes Saturdays, it gives me an opportunity to spend time in my favorite room of the house - the kitchen, organize my thoughts about meals for the week, meal plan, prep and cook. Also, since the kids are often home, I have the opportunity to teach them about the foods we eat, how to prepare them, and expose them to a wide variety of fruits, vegetables, proteins, and grains.
