Scallion and tomato
Sausage, pepper, and cheddar
Spinach and feta
Mushroom and cheddar

Total of 9 eggs. A must have! I wrapped them in parchment paper and popped them in the microwave every day this week.

No, it’s not burnt. That’s a crunchy layer of cheese!!

Frying pan filled with cheese then a layer of egg and fixings - cook covered to make it set. Roll it up, add more fixings.

I used red pepper, red onion, fresh cilantro, and more than a dollop of sour cream.

I keep coming back to these because they are so easy to make & good reheated! Use your leftover produce and bake at 400 for 25.

This week I’m having spinach (lots of it 💪🏻), mushroom, red onion, creamy provolone, red pepper flakes, a splash of milk and a dash of garlic powder.

If your cereal bowl doesn’t look like this, chances are you’re doing it wrong.

Raspberry peach is my all time favorite combo for all things fruit. Try it while peaches are in season!
