Back to basics!! Weâve all seen a thousand recipes by now, but this one? Quick, simple and super flavorful, and a great way to put all that summer produce to good use. Vegan or vegetarian, your choice! Recipe from
Zucchini Noodles with Fresh Basil & Pine Nuts
* 1 large green zucchini
* 1 large yellow squash
* 2 tbsp olive oil
* 4 cloves of garlic, grated
* 1/4 tsp salt
* 1/8 tsp black pepper
* 1/2 cup chopped basil
* 3 1/2 tbsp raw pine nuts
* 1-2 tsp lemon zestÂ
* Grated parmesan cheese (optional)
INSTRUCTIONS
1. Use a julienne peeler or any of the tools listed above or see the note below. Cut long strips of zucchini until you reach the seeded core (where it becomes too soft to peel). Reserve the cores to use in soups, stir-fries, etc (See Note)
2. Pat the noodles dry with paper towels to absorb excess moisture.
3. Heat 1 1/2 tablespoons of the olive oil in a large nonstick pan. Add zucchini, grated garlic, salt, and pepper and cook at medium heat for 3-5 minutes ( the time will depend on the texture you prefer. For firmer, "crunchier" zucchini noodles cook for less time). Take into consideration that the longer you cook the zucchini noodles, the more water they will release. Remove from heat and place in a shallow bowl.
4. Add pine nuts to the pan and toast for 2-3 minutes until golden brown, tossing often (pay close attention to the pine nuts as they can easily burn!). If the zucchini has released a lot of water, drain some of it and then add the pine nuts.
5. Sprinkle with chopped basil and lemon zest and drizzle the remaining 1/2 tablespoon of olive oil

QUICK AND EASY JALAPENO LEMON MARINATED FETA CHEESE
ingredients:
1 container feta cheese sliced or cubed
3-4 slices lemon
1 T fresh lemon juice
1 tsp garlic salt
1 tsp crushed pepper flakes
3 jalapeños thinly sliced ( remove seeds if you need to lower the spice level)
1/2 cup Avocado Oil
Place all ingredients in a jar or dish with tight cover. Let marinate at least for 2 hours. serve it over lettuce or spread it on a cracker or toast for a delicious easy appetizer. ENJOY!

cheesy tomato sauce pasta:
Heat up olive oil in a sauce pan.
Add sliced onions, sauté till translucent
Add in zucchini - lightly brown
Add tomato paste + water, bring to a boil
Spices - salt, pepper, garlic. Keep tasting till flavours pop and tastes đŻ to you.
Add in cooked brown rice pasta (I used brand)
Add in cheese blend and mix - (love this part!)
Sprinkle more cheese on-top and some greens for pop!
Serve in a bowl and enjoy đ

Ingredients:
balsamic glaze
whole ripe tomato, sliced thin
Fresh mozzarella cheese, sliced thick fresh basil leaves
Directions: arrange tomato and mozzarella slices on a platter. Arrange basil leaves between the slices. Drizzle balsamic glaze over the top of the salad, getting a little bit on each slice.

These ricotta pancakes make a great breakfast, lunch or dinner option. Recipe from
INGREDIENTS
* 1 cup ricotta cheese
* 1 cup all-purpose flour
* 1/2 teaspoon baking powder
* 1 1/2 tablespoons granulated sugar
* 1/4 teaspoon fine salt
* 3/4 cup milk (not nonfat)
* 2 large eggs, separated
* 1/2 teaspoon vanilla extract
* Butter, for cooking
* 1. If your ricotta seems to have a lot of liquid, set it in a fine mesh strainer to drain off excess liquid about 30 minutes before you start cooking. If your ricotta seems fairly dry and compact, you can skip this step.
* 2. Whisk together flour, baking powder, sugar, and salt in a small bowl. Combine ricotta, milk, egg yolks, and vanilla in a separate, larger mixing bowl. Add the dry ingredients to the ricotta and milk mixture, stirring gently until just combined.
* 3. Beat the egg whites with a handheld electric mixer until stiff (see Recipe Note). (Alternatively, whisk the egg whites by hand.) Stir a small scoop of the egg whites into the pancake batter to lighten the batter, then fold in the remaining whites with a spatula.
* 4. Heat a griddle over medium-high heat. Melt a small bit of butter in the pan, just enough to coat the surface. Use a 1/3-cup measure to pour batter onto the hot griddle. Cook the pancakes for about 3 or 4 minutes, until the undersides are golden and you see a few bubbles popping through the pancakes. Flip the pancakes and cook another 2 to 3 minutes, until golden. Repeat with the remaining pancakes.

1/4 cup of crumble feta
Olive oil

Preheat the oven to 375.
Spray a muffin pan with baking spray. Brush olive oil on both sides of the wonton. Carefully tuck each wonton into the muffin pan. Bake for 8-9 minutes.
In a small pot, sauté the spinach with one tablespoon of olive oil. Add salt, pepper and milk. Mix. Add the ricotta. Cook on low fire for about 10min. Remove from the fire and let it cool down.
Fill up the cups with the spinach mixture and crumble the feta on top. Serve at room temperature.

Elevate your dessert on Shavout with these. Cannoli With Citrus and Sweet Ricotta Filling
1/3 cup Orange Marmalade
16 oz NK ricotta cheese, drained
1/4 cup powdered sugar
1/2 tsp. vanilla extract
Ground cinnamon
1 tbsp. grated fresh orange peel
12 to 18 cannoli shells, purchased from a kosher market or make your own
GARNISH:
Mini chocolate chips and chopped, candied citrus peel
Additional powdered sugar
- COMBINE marmalade, ricotta, powdered sugar, vanilla, cinnamon and orange peel in medium bowl. Spoon mixture into a pastry bag without a tip or into a resealable plastic bag, then cut one corner off. Pipe into shells.
- CHILL at least 2 hours or up to 6 hours. Garnish with mini chocolate chips or candy bits. Sprinkle with powdered sugar before serving.
