Sausage Making 101 is next Sunday and it’s the last class of the year! Each hands on participant will learn to trim out/butcher a pork leg or shoulder. Then we will make fresh linked sausage and pan sausage and send ya home with about 20-25 lbs of handmade sausage.

Hello old pals.. been a minute! The main reason our chicken operation has paused is that we’ll be hatching one of our own come this winter! 🐣 I started Cielito Lindo in hopes that we could raise our family around livestock and a working farm- grapes, birds and sheep. It looks as though we are entering phase 2 of the plan. While this little babe incubates, we’re scraping together what’s left in the freezer (I keep the ‘seconds’ from processing, did someone say ‘gochujang wings’?) and still dreaming big for the future.

In the meantime, don’t forget to take a butchery class! We’ve got the Whole Lamb Butchery class coming up on Oct. 1st and there’s only *2 spots* left!

First class of the season is an oldie but goodie as this is the first butchery class I ever started teaching. It’s partial demo, but mainly hands on with beautiful meat. Hands On tickets are limited to 6 students, so grab ‘em while they’re hot!

will be prepping an amazing meal for after the work is done. She’s also got her farmstay available for any of you out of towners taking the class!

It’s with an onion heart (lots of layers, lots of feels) that I share that our chicken operation is taking a pause for the remaining of the year. Starting the farm was a dream and I could not have gotten it off the ground without family, friends and amazing customers. With that being said, we are completely sold out of chicken for the time being. But have no doubt, our vineyard grazed & pasture raised happy birds be back in 2024!

There are so many humbling and happy moments from the last couple of years… It brings me all the joy to look back and share some of it with y’all through these photos. I’ve learned so much in the short amount of time that the farm has been operating with my friends and family by my side. We’ve perfected our harvest days, packing days, built better infrastructure, learned some things about feeding, learned some more things about chicken plus all the other ins & outs that come with farming. I’m proud of the work we’ve done and I really love raising these beautiful ole meat birds. Just gotta take a beat and look forward to continued growth after we prepare for the next chapter in life.

As promised, our Fall Butchery Class Schedule has officially been made live on our website!

We’re offering some of our favorite classes this fall, like our Introduction to Hog Butchery, Whole Lamb Butchery, Hog Intensive, and Sausage 101.

The farm will be taking a little bit of a break this winter and next spring, so don’t miss your chance to take one of our hands-on butchery classes while you can.
