Apples and honey are the easy part. Choosing the honey is where it gets interesting.

The High Holidays begin Friday evening, and the honey stays on the table for most of a month after that. Each occasion asks something different of the jar. Pale and mild for the dipping bowl, so it sweetens the apple rather than clashing with it. Dark and malty for the honey cake, because a delicate honey vanishes into the flour and the spice. Something spreadable for the bagels after the fast.
