This week at Service Deli we have our Whole NEW YORK STRIPS (13lb avg) for $8.49/lb. With a NEW YORK strip, you can either cook the whole roast for a hearty meal or cut it into smaller strip steaks to savor throughout the week. Thinly sliced NEW YORK STRIP is perfect for adding to salads or making delicious sandwiches. Always start with a room temperature steak. The 3-3-3 rule for steak is a simple, foolproof method perfect for cuts about an inch thick. You sear one side over high heat for 3 minutes, flip and sear the other side for another 3 minutes, then let it rest for 3 minutes before slicing. Be sure to adjust your time for thicker steaks.

This week at Service Deli we have ST. LOUIS STYLE PORK SPARERIBS 91pc) for $3.29/lb.ST. LOUIS STYLE SPARERIBS are competition-grade cut of pork, prized for their flat shape, generous meat, and rich marbling. Whether you’re using a smoker, grill, or oven, the low and slow method is the best way to break down connective tissues. Following the 3-2-1 method, your ribs should come out perfect every time.
Always remove the thin, papery membrane (pleura) from the back of the ribs before cooking, as this lets the smoke and seasonings soak pe*****te the meat.
-Smoke the ribs unwrapped, meat side up, for 3 hours.
-Wrap them tightly in heavy-duty foil with a splash of apple juice, butter, or brown sugar for 2 hours—this braises the meat and makes it tender.
-Finally, unwrap the ribs, place them back on the smoker, and brush with BBQ sauce for 1 hour to let the sauce caramelize and get deliciously sticky.
