It was a busy end to our summer here on the homestead. We butchered and put 50 chickens in the freezer. The necks and feet were used to make canned/frozen stock and we also diced and canned all of our leftover tomatoes. Lastly, we started to preserve eggs for when our chickens will naturally reduce their production over the winter.

This technique is called water glassing and has been around since the 1800’s. It is an incredibly simple and safe way to preserve eggs for over a year. All you have to do is mix 1 oz. of pickling lime with every quart of water and make sure your unwashed just laid eggs are completely submerged in an airtight container. When you are ready to use them, you simply remove them from the solution, rinse them off, and use them as you would have if they were just laid.

Our hens are finally laying! And I was surprised to find some blue eggs this morning as well.
