Labor Day Fried Gnocchi Bites 🥟
INGREDIENTS :
🧂 1 tsp kosher salt
🥟 1 (16-oz.) package gnocchi
🥚 2 large eggs
🧂 Freshly ground black pepper
🍞 2/3 cup Italian-style bread crumbs
🧀 1/3 cup grated Pecorino Romano, plus more for topping
🌾 3 Tbsp. all-purpose flour
🛢️ Peanut or vegetable oil, for frying
🌿 Finely chopped fresh parsley
🍅 Store-bought or homemade marinara sauce, warmed, for serving
INSTRUCTIONS :
1. Bring a large pot of salted water to a boil. Cook the gnocchi until tender (per package directions). Drain, rinse under cold water, and spread on a baking sheet to cool for about 5 minutes.
2. In a shallow bowl, whisk the eggs with a pinch of salt and pepper. In another shallow bowl, mix bread crumbs and Pecorino.
3. Sprinkle the flour over the cooled gnocchi and toss to coat. Season lightly with salt and pepper.
4. Pour about 1/8 inch of oil into a large skillet and heat over medium until shimmering. Working in batches, dip gnocchi into the egg mixture, let excess drip off, then roll in the bread crumb mixture to coat. Return to the baking sheet.
5. Fry the coated gnocchi in batches, turning occasionally, until golden brown (2–3 minutes). Transfer to a paper towel–lined plate and sprinkle with a little salt.
6. Arrange on a platter, top with extra Pecorino and parsley, and serve with warm marinara for dipping.
