Labor Day Fried Gnocchi Bites 🥟

INGREDIENTS :
🧂 1 tsp kosher salt
🥟 1 (16-oz.) package gnocchi
🥚 2 large eggs
🧂 Freshly ground black pepper
🍞 2/3 cup Italian-style bread crumbs
🧀 1/3 cup grated Pecorino Romano, plus more for topping
🌾 3 Tbsp. all-purpose flour
🛢️ Peanut or vegetable oil, for frying
🌿 Finely chopped fresh parsley
🍅 Store-bought or homemade marinara sauce, warmed, for serving

INSTRUCTIONS :
1. Bring a large pot of salted water to a boil. Cook the gnocchi until tender (per package directions). Drain, rinse under cold water, and spread on a baking sheet to cool for about 5 minutes.
2. In a shallow bowl, whisk the eggs with a pinch of salt and pepper. In another shallow bowl, mix bread crumbs and Pecorino.
3. Sprinkle the flour over the cooled gnocchi and toss to coat. Season lightly with salt and pepper.
4. Pour about 1/8 inch of oil into a large skillet and heat over medium until shimmering. Working in batches, dip gnocchi into the egg mixture, let excess drip off, then roll in the bread crumb mixture to coat. Return to the baking sheet.
5. Fry the coated gnocchi in batches, turning occasionally, until golden brown (2–3 minutes). Transfer to a paper towel–lined plate and sprinkle with a little salt.
6. Arrange on a platter, top with extra Pecorino and parsley, and serve with warm marinara for dipping.

🌭 Labor Day Cheesy Shrimp & Grits Bites 🇺🇸

INGREDIENTS :
🥛 2 ½ cups whole milk
🌾 1 cup quick-cooking grits (not instant)
🧀 1 ½ cups shredded smoked gouda or sharp cheddar
🧈 4 Tbsp. unsalted butter, divided
🌶️ 3 ½ tsp. Cajun seasoning, divided
🧂 Kosher salt
🦐 30 medium shrimp (about 1 ½ lb.), peeled, deveined
🥬 2 stalks celery, finely chopped
🫑 ½ green bell pepper, seeds & ribs removed, finely chopped
🧅 3 scallions, green and white parts separated, thinly sliced
🧄 3 cloves garlic, finely chopped
🍅 1 Tbsp. tomato paste
🌾 ½ cup all-purpose flour
🥚 2 large eggs
🥣 1 cup panko bread crumbs
🛢️ 2 cups neutral oil (like avocado or canola)
🧂 Store-bought or homemade remoulade sauce (optional)

INSTRUCTIONS :
1. Cook the grits: In a small saucepan over medium-high heat, bring milk and 1 ½ cups water to a gentle simmer. Slowly pour in grits while whisking constantly. Reduce heat to medium-low and cook, whisking often, until thick (about 7 minutes).
2. Flavor the grits: Stir in the shredded cheese, 2 tablespoons butter, 1 teaspoon Cajun seasoning, and a pinch of salt. Spread the mixture evenly into an 11x8-inch baking dish. Refrigerate until fully chilled (about 30 minutes).
3. Prep the shrimp: While grits chill, pat shrimp dry. Toss with salt and 1 ½ teaspoons Cajun seasoning in a bowl.
4. Sauté the veggies & shrimp: In a large skillet over medium heat, melt the remaining 2 tablespoons butter. Add celery and bell pepper with a pinch of salt. Cook until softened (3–4 minutes). Stir in white scallion parts, garlic, and tomato paste; cook 2 minutes until paste darkens. Push veggies to one side, add seasoned shrimp to the center, and cook until opaque (3–4 minutes). Transfer everything to a plate.
5. Cut the grit cakes: Use a 2-inch round cutter to cut 15 rounds from the chilled grits (they should be about 1 inch thick). Cut each round in half horizontally (like a burger bun) to make 30 half-inch-thick disks.
6. Bread the grits: Set up three shallow bowls – one with flour mixed with the remaining 1 teaspoon Cajun seasoning, one with beaten eggs, one with panko. Coat each grit disk in seasoned flour, dip in egg (shaking off excess), then press into panko. Place on a baking sheet and freeze for 10 minutes.
7. Fry until crispy: In the same skillet over medium-high heat, heat the oil. Working in batches, fry the breaded grits until golden and crisp, about 1–2 minutes per side. Drain on paper towels and sprinkle with a pinch of salt.
8. Assemble: Arrange the crispy grit cakes on a platter. Top each with a spoonful of the shrimp and vegetable mixture. Sprinkle with sliced green scallion parts. Serve with remoulade on the side if you like.

Best Strawberry-Lemonade Bars 🍋

INGREDIENTS :

For the Crust:
🍓 Cooking spray
🍓 1/2 cup plus 1 Tbsp. granulated sugar
🍓 1 tsp. finely grated lemon zest
🍓 1/4 tsp. kosher salt
🍓 2 1/2 cups all-purpose flour
🍓 1 cup (2 sticks) plus 2 Tbsp. unsalted butter, melted

For the Filling:
🍓 1 1/2 cups fresh strawberries, washed and hulled
🍓 1 1/2 cups granulated sugar
🍓 3 Tbsp. cornstarch
🍓 1 Tbsp. finely grated lemon zest
🍓 1 1/2 cups fresh lemon juice (from about 8–12 lemons)
🍓 1/2 tsp. kosher salt
🍓 4 large eggs
🍓 3 large egg yolks
🍓 Confectioners' sugar, for dusting

INSTRUCTIONS :

1. Preheat your oven to 350°F. Lightly grease a 13x9-inch baking dish with cooking spray, then line it with parchment paper, leaving some overhang on the two long sides for easy removal.

2. In a large bowl, use your fingers to rub together the sugar, lemon zest, and salt until the mixture smells fragrant, about 1 minute.

3. Add the flour and melted butter to the bowl, and stir with a rubber spatula until a soft, wet dough forms. Press this dough evenly into the prepared pan using your fingertips or the back of a measuring cup.

4. Bake the crust for 20–25 minutes, until golden in the center. Let it cool for 20 minutes, then reduce the oven temperature to 325°F.

5. While the crust cools, make the filling. In a food processor, combine the strawberries, sugar, cornstarch, lemon zest, lemon juice, and salt. Process until the strawberries are completely broken down and the mixture is mostly smooth (a few tiny strawberry bits are fine).

6. In a separate bowl or measuring cup, whisk the eggs and egg yolks together until smooth. Pour them into the food processor and pulse until just combined — the mixture will be very thin.

7. Pour the strawberry-lemon filling over the cooled crust. Carefully transfer the dish to the oven (watch out for sloshing) and bake for 30–40 minutes, until the edges are set and the center is just slightly jiggly.

8. Let the bars cool completely. Run a knife along the short ends of the pan to loosen, then use the parchment overhang to lift the entire slab onto a cutting board. Dust generously with confectioners' sugar, cut into squares, and enjoy!
