Whew! What a week!

It has been a very interesting week at Woven Acres. A lot has happened and sometimes it feels like my brain can’t handle it all. It’s those times when I have to shift my focus to the little moments that bring me joy: cutting curds, refilling water troughs, milking, snuggling the babies, or watering the garden. It’s the little moments that bring me back together, into a better mindset… into a whole person.

I can’t fix all my problems or get everything done that needs to get done right away. And I can’t let those things stress me out. All I can do is the next right thing, and that may look small in the grand scheme of things, but every little step gets me further toward my goals.

Keeping my focus small, keeps my heart big. 💛✨🐐

✨ SAD FARM UPDATE ✨

We almost lost Silk. She had escaped without us noticing. After over 15 hours, we found her stuck in a “sister tree,” where two trees grow out of the same root. Her leg was caught and badly damaged.

It was Caleb Gulder who found her. 🙌🏼👏🏼 After nearly an hour of searching as a group, (looking for her body, as we expected that she was dead, since she wasn’t calling out for help) he prayed for direction. God led him RIGHT to Silk.

She was weirdly contorted from hours of trying to free herself. She couldn’t stand on her own, due to weakness. We carried her out of the woods and brought her into the hut and secluded her in the kid pen.

She doesn’t appear to have any obvious breaks, but there very well could be fractures or torn ligaments. Right now her body is doing exactly what it is supposed to do: swelling at the joints as a natural splint/cast to aid in healing. 🙌🏼

She did get several rounds of B12 and NutraDrench, as well as regular Banamine for pain and swelling. I won’t continue the Banamine for much longer, as it can be hard on her organs with prolonged use.

After a couple days on bed rest, she is doing MUCH better and is much more stable. I was very worried we would lose her due to shock.

I will keep ya’ll updated as she heals 💛 and a MASSIVE THANK YOU to Caleb for going the extra mile to find Silk. I had already given up hope that we would find her. I was in the hut, giving her life to God in my heart and feeling so defeated at my losses this year, when Caleb yelled from deep in the woods that he had found her ALIVE. Caleb is the real deal, ya’ll. We are so blessed to call them friends and neighbors 💛

“Middle of Nowhere” vibes is my kind of energy. ✨

I honestly love living this way. Yeah, our driveway is a mile long and it does take a hot minute to get into town, and an even hotter minute to get to any kind of big box store. A short commute and convenience ain’t got nothing on my goats 🙈✨

✨ SURGE UPDATE ✨

Surge and Stitch are growing so well and are adjusting well to being in gen-pop with the queens. Though, as the summer moves forward, I will need to separate them soon. These boys are getting old enough to breed, and I don’t want any accidents.

But I wanted to just point out how beautiful this boy is. I think he’ll make a stallion of a herdsire; I’m so impressed with him. 🙌🏼 I really loved his Dam’s mammary and hoping these genetics can correct a few things in my herd. I feel like my girls have gorgeous udders, but there’s definitely room for improvement.

I’m most excited to pair him with Gingham’s Georgette and Chantilly. Both will be bred in late fall for late spring kids.

✨ How to perform the Squeeze Test ✨

The squeeze test is the main way that I test for curd doneness. You can also drop a curd on the counter: if it bounces, it is ready, but if it splats, it still needs more cooking time.

You can also break apart a single curd. Is the center still soft and filled with whey, or is it cooked throughout?

The goal here is to have a fully cooked curd, where milk fat isn’t leaking out when the curd is pressed.

How do you test when your curd is fully cooked? Would love to hear how you guys do it!

✨ IS THE CURD SET? ✨

In Cheesemaking, determining when the curd is set properly can make or break your cheese. Especially if you are using a more delicate milk like goat’s milk.

If you cut the curd too early before it has set properly, you are at a high risk of shattering the curd, resulting in a very dry and undesirable cheese. Too late, and your cheese is rubbery.

For me, the sweet spot is when I get a “clean break,” either from the edge of the pot or through the knife test.

I know this is Ryan’s favorite perk too 😆 except he gets the fresh curds; I don’t give him the dropped pieces.

Tasting the curd is honestly one of my favorite parts of cheesemaking. After spending several hours working through the process, that little taste with a pinch of salt is 👌🏼✨

This is a Dragon’s Milk beer-brined cheese, similar to a white Leicester, but the curds are soaked in a dark stout beer. These curds were salted directly, so this taste test was perfect 👏🏼

It’s perfect for the cheeseboard, to be eaten with crackers and summer sausage, and maybe a beer on the side 🙈🍺 my kind of cheese.
