Heat is the enemy of most w**e. Madeira is the old exception.

With estufagem, the w**e is deliberately warmed for at least 90 days. The slower canteiro method leaves it to age in wooden casks for a minimum of two years.

The treatment that would spoil many w**es is part of what makes Madeira what it is.

Canadian icew**e has to freeze outdoors, while the grapes are still hanging on the vine.

Picking ordinary grapes and freezing them afterward doesn't count under Canadian standards. The grower chooses when to harvest, but the weather decides whether there will be an icew**e harvest at all.

Cork gets blamed for every musty bottle, though it isn't always the culprit.

That damp-cardboard smell usually comes from a compound called TCA. It can develop in cork, but it may also appear in oak and elsewhere around a w**ery. Even a screw-capped bottle can be "corked."

It's enough to drive a person to drink.

A few crystals at the bottom of a bottle are usually no cause for alarm.

They're tartrate crystals, sometimes called w**e diamonds. They form naturally and tend to appear after a w**e has been chilled.

They aren't bits of glass, and they don't mean the w**e has gone bad.

Never judge a grape by its skin.

The juice inside most dark grapes is pale. Press the fruit promptly and keep the juice away from the skins, and a grape such as Pinot Noir can make a white w**e.

The French call it Blanc de Noirs, meaning white from black.

There's roughly three times as much pressure inside a bottle of Ch*****ne as there is in a car tire.

That explains the heavy glass, the mushroom-shaped cork and the wire cage. None of them are there for show.

Ease the cork out slowly and point it somewhere safe. Sparkling w**e can get carried away.
