Our gardens are finally producing lots of goodies! Cherry tomatoes go for $4/lb, heirloom tomatoes go for $3/lb, and cucumbers go for $2/lb.

The cherry tomatoes include the following varieties: isis candy, black strawberry, evil olive, and large cherry. We took all the heirlooms this time and are throwing them in the freezer to can for our family another day when we have more time.

Where do the days go? This summer has flown by too fast! Let us know if you are interested in any of these goodies. We will do one final rhubarb harvest soon as well ($5/lb washed and cut to fit into freezer bags)

We got a couple mixed fruit boxes from the Fruit Truck this morning. In the box were persimmons. Sky and Lucian tried them and while they agreed they weren't bad, they also were not something they would eat raw regularly, and certainly not the 12 that we got in our boxes. Patrick agreed with all of this.

So what do you do with fruits that you acquire and feel this way about?

Our answer? Simple syrup. To make simple syrup, cut the fruit into small pieces. If you prefer smooth and have access to one, put the fruit through a food processor. Measure it out and put it into a saucepan. Add an equal amount of sugar. Stir it together. Heat it to boiling. Once it boils you can turn the heat down to maintain a boil. At this point you should stir constantly to avoid burning to the bottom of the pan. Stir/boil for 10 minutes and you are done!

You can put into storage containers and store in the fridge for up to a week. If you aren't wanting to use all the syrup immediately, you can put into sterilized jars and process in a water bath canner just like you would for a jam or jelly. If you process in a water bath canner, you can store in the cupboard at room temperature. You should refrigerate after opening.

This is one way to participate in food sovereignty, to be more self sufficient, and to reduce food waste.

One part of homesteading that isn't talked about enough is planning ahead.

This year we canned applesauce and tomato soup in smaller 8 oz jars.

Why?

Because we still have day jobs. An 8 oz jar of applesauce or tomato soup is perfect as a single serving that we can grab and stuff into our lunch boxes as we leave for work in the morning.

It should come as no surprise then that Sky baked banana bread into muffin tins this morning so that they can be wrapped up and frozen as another option to grab and go for work. By planning ahead in this way, we can minimize how much we rely on fast food or purchasing highly processed food that is packed with salt and other fillers and preservatives.
