A modern twist on the timeless Original Recipe. We eliminated the sugar and opted for the natural sweetness of Mangos, and replaced the jalapeños with the earthy spice of habanero peppers.
The mangos impart a tangy sweet start on the palate while the habaneros move the spice from the back of the throat to the front of the mouth. The full fresh flavor of this recipe continues the harmony of sweet and spice as found in our other recipes while not being overbearing on the spice level.

Corn Pudding Casserole:
Ingredients
1 can whole kernel corn, drained
1 can cream-style corn
teaspoons sea salt
1/2 teaspoon freshly ground pepper
4 scallions, thinly sliced, white and tender green parts
1 can fire roasted, mild diced green chiles
1/4 cup yellow corn meal
8 ounces sharp cheddar cheese, grated, divided
6 large eggs
1 8oz container sour cream
4 tablespoons butter, melted
1 cup tortilla chips, roughly crushed
Your Favorite Hein Family Kitchen Salsas
🔥Heat oven to 350 F.
🌽In a large mixing bowl combine both cans of corn, salt, pepper, scallions, chiles, corn meal and 1 cup of the shredded cheese. In a medium bowl, whisk the eggs and sour cream until combined. Pour the egg mixture into the corn mixture and stir to combine.
🔥Brush a 9x13 inch glass baking dish with the melted butter. Pour the batter into the dish. Sprinkle with the reserved shredded cheese and the crushed tortilla chips. Bake until golden brown, about 45-50 minutes.
🌽Serve with several jars of salsa. Let everyone pick their preferred Hein Family Kitchen salsa to drizzle on top.

CHORIZO CHILAQUILES
An easy, delicious one-pan breakfast.
Recipe by John Pullis, FoodE Expert at Lunds & Byerlys Chanhassen
Ingredients
1 small red onion, thinly sliced
3 limes, 2 juiced and 1 sliced into 6 wedges
1/2 teaspoon Kosher salt
1/2 cup Cotija cheese, crumbled
4 ounces Mexican crema
1 ripe avocado
1/2 cup cilantro sprigs, washed and dried
1 jalapeno, sliced into thin rounds
8 ounces L&B Chorizo Sausage
3 cups Hein Family Kitchen Papa's Ghost Salsa
4-6 cups tortilla chips
2 tablespoons avocado oil
4 large eggs
Directions
🌶️In a small mixing bowl, toss the sliced red onions with juice of 2 limes and Kosher salt. Set aside.
🌶️Cut avocado in half, remove pit, and scoop out flesh. Slice thinly and squeeze the juice of 2 lime wedges over the top. Set aside.
🌶️Place a large non-stick sauté pan over medium heat and cook chorizo, breaking into small pieces with a wooden spoon, until cooked through. Remove chorizo from pan.
🌶️Add half of the tortilla chips to the same sauté pan, pour salsa over chips, and reduce heat to medium-low and cook undisturbed for 5 minutes.
🌶️Stir in the chorizo and remaining tortilla chips and cook another 5 minutes.
🌶️Divide the mixture between 4 warm plates.
🌶️Heat oil in skillet and cook eggs sunny side up. Place eggs over the chilaquiles.
🌶️Top each plate with avocado slices, cotija cheese, cilantro springs, pickled onions, lime wedges and sliced jalapeno. Drizzle with crema.
Chef’s tip
🌶️Adding the tortilla chips in two batches will provide a contrast of textures - some soft and some crunchy.
