It's never too early to start thinking about the holidays—not because there's a deadline, but because the earliest planning is also the easiest kind. A little attention now, while nobody's counting down yet, beats the version of you scrambling through a grocery store on the 23rd. Start the list. Start the thinking. The cooking can wait its turn.

Crank the heat and you'll get color fast, sometimes too fast. The edges catch before the center's done, and you end up babysitting the oven instead of trusting it. Slow baking means we can walk away, come back, and every cracker in the batch looks the same. That's the whole point of doing it by hand.

Fresh herbs bring brightness and a little water content. Dried herbs bring concentrated flavor and none of that water — which matters more than people think in a dough that needs to hold its shape.
Neither one is "the right way." They're just different tools.
