Mother’s Day weekend we fired up then 1250 and 2500BFG to smoke baby back ribs, St. Louis style ribs, beef ribs and chicken thighs for pulled chicken. The above were served with homemade coleslaw, potato/egg salad, and cornbread. Happy Mother’s Day to all the amazing moms out there!

Sometimes it’s not always about what you can do on a smoker. A perfect holiday dish is a well prepared Beef Wellington that starts with a filet of beef loin. Pam sear the loin and coat with English mustard after it comes out of the pan. Let rest while you make your duxelle. First wrap with Parma ham and duxelle and let set up in the fridge then wrap again in puff pastry. Let set up in the fridge one last time before egg wash and bake at 400f for 35 mins.

It’s been such a busy a summer and a while since my last post. After about a year of evaluating my it’s still continuing to impress. Catering clients are floored by the flavor. The last smoke was brisket with our signature beef dry rub, pork shoulder, baby back ribs, and country style spare ribs with our signature pork rub and homemade bbq sauce. Brisket and pork shoulder smoked for 16hrs low and slow with great bark and incredible flavor and tenderness.

As we continue to grow we have added new equipment to line up to better serve our customers. We know have a Recteq Rt-1250 and an Rt-2500BFG which are producing amazing results. Weekend cook was brisket, pork butt, baby back ribs, and chicken thighs for pulled chicken.
