🍓🍰 Berry Tiramisu
Ingredients:
For the Berry Compote:
2 cups mixed berries (strawberries, raspberries, blueberries)
1/4 cup granulated sugar
1 tablespoon lemon juice
2 tablespoons Grand Marnier (optional)
For the Tiramisu:
1 cup heavy cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
8 ounces mascarpone cheese
1/4 cup Grand Marnier
1 cup strong brewed coffee, cooled
24 ladyfinger cookies
Cocoa powder, for dusting
Instructions:
Prepare the Berry Compote:
In a saucepan, combine the mixed berries, granulated sugar, lemon juice, and Grand Marnier (if using).
Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens, about 8-10 minutes.
Remove from heat and let it cool completely.
Prepare the Tiramisu Filling:
In a mixing bowl, beat the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
In another bowl, whisk together the mascarpone cheese and Grand Marnier until smooth.
Gently fold the whipped cream into the mascarpone mixture until well combined.
Assemble the Tiramisu:
Quickly dip each ladyfinger into the cooled brewed coffee, ensuring they are moistened but not soggy.
Arrange a layer of dipped ladyfingers in the bottom of a 9x13-inch dish or a trifle bowl.
Spread half of the mascarpone filling over the layer of ladyfingers.
Spoon half of the berry compote over the mascarpone layer, spreading it out evenly.
Repeat with another layer of dipped ladyfingers, the remaining mascarpone filling, and the remaining berry compote.
Cover the tiramisu and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set.
Serve and Enjoy:
Before serving, dust the top of the tiramisu with cocoa powder for a finishing touch.
