There is something to be said about hybrid vigor.

The last couple of years, we've been playing with Highland crossbreds. The calf in this photo is a Highlangus heifer - her daddy was a Highland and her momma is a medium sized Angus. The calf is just over 3 months of age... she's huge and our animals are 100% grass-fed.

Last year, we delivered a Highlangus bull calf to a friend of ours who runs a feedlot full of Angus. Our 100% pastured calf was a week+ younger than most of his grained calves and probably a good 75 lbs heavier... taller too.

Our pigs love being outside. Most will choose a bed of straw over a hut. It's not unusual to see our American Guinea Hogs sleeping outside, even in a snowstorm... crazy little buggers.

If my grandmother (a large German woman) could reach 90 years of age, by eating natural fats and/or things fried in lard, it would be crazy for me to think her diet was harmful. She ate the same as her parents... and before that... their parents ate as those did before them.

For all those out there who prefer beef over turkey on Thanksgiving, how about some smoked brisket?

Brisket is the meat of choice for barbecuing in the great state of Texas. In fact, it is considered the "National Dish of Texas." When brisket is cooked properly, it will be "fall apart tender and delicious". Smoking a brisket takes a lot of time and effort - but it is well worth the time as the final results are nothing less than spectacular!

This is so easy to make and so good! For best results, use a proper smoke/cooker that has a water tray for moisture.
