Where it diverges is in the barrel: aged for two years in new charred oak, it develops a richer oak influence that seamlessly bridges the worlds of American Single Malt and bourbon.

Old World traditions meet New World character.

Our Gently Peated American Single Malt is a nod to the legendary distillers of Scotland who inspired our craft, reimagined for our unique terroir in Idaho.

We mash heavily peated malt imported from one of Scotland’s finest maltsters with locally grown Idaho barley, then distill using traditional copper pot stills and mountain water.

Our approach is intentionally restrained. The smoke is woven gently into the spirit, adding subtle, complex layers while letting the rich malt character shine through.

Bold enough for the seasoned scotch drinker, approachable enough for the curious palate.
