Egg Wi-Fi signal is great.

Ever wanted to try ?
Guess the number of eggs in the bucket on the right and the closest correct answer wins the eggs.

Our duck eggs are pasture raised, pond dabbled, fed with local milled feed, grass, native fruits (they steal them from the orchard) and organic veg scraps from the kitchen. Plus lots of bugs and invasive earth worms.

We made duck egg pasta.

400g of 00 pasta flour (00 is the grind, soft and fine)*
200g of duck eggs (we used mostly yolks and a little whites)
Bring it together in a smooth ball
(Dip your hands in water while kneading if crumbly)
Leave in refrigerator for 2 hours (overnight is best)

With pasta maker, roll out to #3
Cut into noodles or fettuccine (Boba Fett-uccine?)

The pasta dish ingredients are:
1/2lb pasta fresh duck pasta
10oz Italian sausage (we got ours from the neighbours farm)
4oz brussel sprouts
1 yellow onion
3/4 cup of shredded Parmesan cheese
2Tbsp marscapone
2Tbsp Apple cider vinegar
2 cloves or garlic

Method:
Cut up all veggies into shreds and set aside
Start water to boil for pasta
Brown sausage 3-4 mins
Add shredded veggies cook for another 4-5 mins
While veggies cook, add fresh pasta to water
Cool pasta for 3-4 minutes or until desired doneness
Drain pasta, reserving 1 cup of the pasta water for sauce and return pasta to the pot
Add vinegar to the sausage/vegetables mixture, scraping the pan to get all the toasty bits for about 30 seconds to 1 minute and turn off the heat.
Add the sausage/vegetables mixtures to the pot with the pasta
Pour in 1/2 the reserved pasta water and stir
Add the marscapone and stir until combined
Salt and pepper as needed (optional)
Finish with Parmesan and serve.

*You don't have to use 00 flour for the pasta making, we tried it with bread flour too, it was just a heavier pasta with more chew to it.

Five ingredient English cottage loaf.

500g flour
10g yeast
10g salt
25g olive oil (or full fat unsalted butter)
320ml warm water

Combine dry ingredients in a bowl and mix
Make a well in the middle of the dry ingredients
Pour wet ingredients into the well
Mix with wooden spoon until combined.
Knead for 15 mins, or if using mixer, 5 minutes.
Using your hands, cup the dough into a tight ball
Let rise until doubled
Punch down, cut 1/3 of the dough off.
Cup both dough portions into balls
Place the small dough ball on top of the larger.
Using fingers, press into the middle until you reach the countertop to seal the two sections together.
Cut 8 slits into the dough to decorate, (or don't)
Let rise again for 15-20 minutes
Preheat oven to 425F and bake for 35 minutes.

If you want a crispier crust, add a pan of cold water to the oven on the bottom shelf to create steam.

We have Duck Eggs!

Our ducks are on pasture year round (when not hiding in the Millennium FowlPen)... and supplemented with plenty of fresh fruits, vegetables, grains and insects.

Come fill your own cartons for $5.50 per 1/2 dozen ($10 per dozen)
Farm pick-up in Kettle River. Occasional travel to Rogers.
