After pistachios are harvested, they’re processed within 18 hours to protect freshness and quality.

After initial hulling and drying, they’re transferred into silos, where temperature and conditions are carefully managed until they’re ready for the next stage.

Designed to safely hold millions of pounds of pistachios at a time, the silos help maintain consistent temperature and airflow - critical for preserving flavor, color, and texture.

Pistachio guac with a little extra kick. 🥑🌶️

Made with our chili pistachios for added heat and crunch, just right for the hot summer days ahead. 

Ingredients - 
3 ripe large avocados
1/3 cup finely chopped red onion
3 tablespoons freshly chopped chives
2 teaspoons finely chopped jalapeño
1 tablespoon fresh lime juice
1 tablespoon fresh lemon juice
1/2 cup chopped shelled pistachios (swap in Keenan Farms chili pistachios for a kick 🌶️)
Salt and freshly cracked black pepper to taste
Tortilla chips for serving

Instructions - 
Cut the avocados in half lengthwise and remove the pits. Scoop the flesh into a medium bowl and discard the skins.
Add the onion, chives, jalapeño, lime juice, and lemon juice. Mash with a fork, leaving some chunks.

Stir in the pistachios and season with salt and pepper.

Serve immediately with tortilla chips.

We’re back with in the fields with Zack!

The reservoirs may be full, but this year’s snowpack wasn’t quite what we hoped for. Recent updates have us at a 25% water allocation, and with some warmer days already causing runoff to start earlier across the valley, this year will really be about using our water wisely.

For now, we keep doing what farmers do best…adapting, staying hopeful, and continuing to farm 💪🌱💧
