I know it's been a while since I posted. Enjoy these photos of the cut comb (comb honey) I harvested over the past few weeks. Available now. $2/oz and I have sizes starting around 3.5 oz and up to 13.5 oz for the biggest piece. I have approximately 8-9 lbs of cut comb to sell currently, after keeping some and gifting some. Next harvest likely in late May.

The girls have started capping off some of the Spring honey in the bottom super already, and we still have at least two major flows left in the season (Gallberry, starting very soon, and Saw Palmetto, starting next month). Honeybees will place a wax capping on a cell of honey once they've dried out the nectar to the proper level of water content (generally somewhere below 18.5% water content). A beekeeper knows that a frame of honey is ready for harvest when at least 90% of the cells on the frame are capped.

The girls have been busy drawing out new comb in the honey supers. It takes about 7 lbs of nectar to produce 1 lb of wax, so building wax comb is a very resource intense process for the bees, and requires a lot of nectar flowing.

Started getting back in to the apiary a little over a month ago. All my colonies made it through winter and are thriving. One already swarmed and I also had to split that same hive. I predict I'll be making a couple more splits in the near future based on the amount of brood I'm seeing. Looking forward to another beekeeping season!

This is good information for those who don't know.

Also, there's actually a form of honey called "creamed honey" that is made by allowing honey to crystallize. It is spreadable and can be enjoyed paired with more food items than liquid honey.

All raw honey crystallizes, but not all honey types crystallize at the same rate. 🍯

Alright everyone. It's the moment you've been waiting for. I am now taking orders for my Keystone Gold variety of honey. Keystone Gold is named so due to its characteristic gold color. The color of honey is a product of the color of the pollen on the flowers the bees foraged the nectar from. This honey was produced right here in Odessa/Keystone, Florida and is All Natural, Unheated, Unfiltered, and Raw. This means it still contains the good stuff (like pollen!). Supply is very limited!
