We make vegetarian/vegan artisanal samosas using Hudson Valley farm fresh ingredients. Our large-format, crispy, artisanal samosas have fillings that are both traditional and offbeat. We can be found at farmers markets, pop ups, and events throughout the tri-state area.

Many new folks here, especially from our new market, Troy Waterfront Farmers Market. So, as much as I hate being in front of the camera, I decided to share this. 🫣

I took these photos because I only have her for a few days, and I wanted to memorialize celebrating Anya’s first promotion at her first job. And what better place to celebrate than Eliza Bistro? Chef Pruitt Pruitt K. - need that Yum Het salad all year round!

The second photo is eleven-year-old Anya trying to make a samosa. With her winter coat on!!! 😂

It’s been four years since we moved to Kingston. Samosa Shack’s second home. We’re now fairly settled here now. I don’t use the word settled loosely. YOU, and so many amazing community partners have made it possible. Deeply grateful for the opportunity to nourish you, and my family!

Find us this Saturday at Troy Waterfront Farmers Market and Kingston Farmers Market with two specials celebrating corn season:

🥪 CORN SAAG NAANINI — zesty corn aloo tikki (Migliorelli Farm), slathered in vibrant green saag (Letitia Fernandes), mango chutney + lettuce (Solid Ground Farm), all wrapped in pillowy naan and toasted like a panini

🌽 BHUTTA / ROASTED MASALA CORN ON THE COB - smoky, open-fire roasted corn (Migliorelli Farm), rubbed with masala using a lemon wedge. A little taste of the streets of Old Delhi. Guaranteed!

And, of course, all the usual suspects - chaat, chai, chutneys & more

Wrapped up our first thebroadwayfest at one of our favourite venues Hutton Brickyards Riverfront Hotel + Venue. Got to hear Audra McDonald and Denée Benton. And serve lovely people some delicious food! All in all I’d say the weekend was 👌🏽

Will see you Troy Waterfront Farmers Market & Kingston Farmers Market Saturday. Next weekend we’re looking forward to our regular late August hangout The Ashokan Center (8/28 - 8/30). Excited to see friends we haven’t seen in a minute Kaatsbaan Cultural Park for their annual festival 8/29.

Start your market morning with a taste of summer. ☀️ 🌽

We’re taking a special trip to our home market this Saturday, 8/1, to make dosas for you. Dosas du Jour Kingston Farmers Market. Our first dosas at any market!

If you’re not familiar, a dosa is a naturally fermented gluten-free rice and lentil crepe—crispy on the outside, tender inside, and made to order.

Serving this week’s open-face golden summer dosa with a vibrant masala of local potatoes and sweet, in-season corn from Migliorelli Farm (that we happily snagged at last week’s market!). Served with our bright curry leaf, cilantro coconut chutney.

Make it a market breakfast by pairing your dosa with a cup of our ginger masala chai. Or save it for lunch. Come hungry, we can’t wait to cook for you

Another market weekend (with a brewery stop thrown in 🍻), another Naanini. This week’s a market favorite: DAALINI 😂

A crispy daal (lentil) tikki, local tomato masala mayo made with tomatoes from Migliorelli Farm, pickled onions, and fresh local greens (yep, Migliorelli Farm again!) All tucked into a warm naan and pressed like a panini. 🤌🏽

Chaat, iced chai, and all the chutneys, too. And we might have a new thirst-quencher to help beat these hot summer days… 👀 Revealing it tomorrow!

We’ll only be slinging samosas on Sunday, 7/19, this weekend Troy.New York, from 2:30p until the final whistle, for the 🇦🇷🇪🇸
