Three reasons your rosé tastes bitter. Spoiler: it’s usually not the wine.

We hear it all the time — “I don’t really like rosé, it’s too bitter for me.” Most of the time, it’s not the bottle’s fault. It’s one of three things:

🍷 It’s too warm. Bitterness shows up more the warmer a wine gets. Straight from the fridge, not room temp.
🍷 It sat on the skins too long. Rosé gets its color and flavor from grape skins — more time there, more bitterness in the glass.
🍷 The bottle’s been open a while. Air changes the wine fast. A few days in and that bitter edge creeps up.

Save this one for your next wine shop trip. You’ll want it when you’re standing in front of the rosé section wondering what to grab.

Have you ever let one little sope steal the whole dinner? 🍷

That’s exactly what happened here. I made a sope, crispy on the bottom, loaded with beef cooked in my favorite spices, a little lettuce and tomato on top. Simple, fresh, and so good.

Then I served it with our Contra Costa Red Blend and honestly? That’s the whole meal. Easy food, a good glass of red, nothing fancy needed.

I loved this dinner. Every single bite.
