Born from a fascination with Buffalo Nickels, Holston River Bison is working to return America’s largest mammal to the pastureland of East Tennessee, the imagination of those who come in contact with them and our dinner tables.

After three years, It is with great sadness that we are announcing the closure of Holston River Bison. Circumstances beyond our immediate control have forced this decision. All 32 bison have been sold and moved to the Lazy G Ranch in Cookeville. Our fondness for and affinity with these magnificent animals has not dimmed and we will continue to support their restoration and expansion. Make a Bison Verde Pot Roast!

- Bison Roast (about 3lbs)
- 2 to 3 Green Peppers
- 1 to 2 Anaheim peppers
- 3 poblano pepper
- 1 large red onion
- 6 to 8 Tomatillos
- Salt, pepper, thyme, sage
- 2 to 3 tbsp apple cider vinegar
- Bone broth to cover
- Squeeze lime juice (optional)

Rub all spices to meat both sides. Cut all vegetables into chunks, put in crockpot and cook on high for two to three hours, until meat is tender, falling off the bone and veggies are tender.

Serve over rice or potatoes. Now enjoy your most tasty, healthy, bison feast!
