🍕🔥 Pizza Enchiladas 🌯🧀
The best of both worlds! These cheesy, saucy enchiladas are stuffed with seasoned beef, melty cheese, and pizza toppings—all rolled into one irresistible dinner!
Ingredients:
- 1 pound lean ground beef
- 1 cup yellow onion, diced
- 1 medium green bell pepper, diced
- 1 cup pizza sauce (or marinara)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 6 large flour tortillas
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup sliced black olives (optional)
- Beef pepperoni slices (use halal beef pepperoni or turkey pepperoni)
- Fresh parsley for garnish
Instructions:
1 Preheat oven to 375°F (190°C).
2 In a skillet, cook ground beef with diced onion and bell pepper over medium heat until beef is browned and veggies are soft. Drain excess fat if needed.
3 Stir in pizza sauce, garlic powder, Italian seasoning, salt, and pepper. Let simmer for 3–5 minutes.
4 Spoon the beef mixture into each tortilla, sprinkle with a bit of cheese, and roll up tightly.
5 Place rolled tortillas seam-side down in a greased baking dish.
6 Top with remaining sauce, cheese, olives, and pepperoni slices.
7 Bake uncovered for 20 minutes or until cheese is melted and bubbly.
8 Garnish with fresh parsley and serve hot!
