Borscht: a stunning and simple Ukranian and more broadly Eastern European soup. When cooked right using quality co-op ingredients, it’s a bright, complex and impressive meal.

Ingredients:
4-5 medium beets
1 sweet onion
3 carrots
1/2 small green cabbage
3 cloves of garlic
Bay leaf
Tomato paste
Lemon zest
ACV
Fresh dill
Crème fraîche or sour cream
Optional: stew beef or similar, potato
Serve with rye bread or Happy Camper GF buckwheat toast you can find at the co-op!
