Saltimbocca alla Romano!

Saltimbocca translates to “jump in your mouth.” This dish originate in Rome in the 19th century. Traditionally it is made with veal, however some regions use chicken or pork. I have 2 versions of this recipe, both have veal, sage and prosciutto, but one adds a sauce.

Let’s start with the original recipe and then I will give you the optional second part.
(Steps 1, 2, 3 are the original recipe)

Instructions:
Step1: Pound the veal into thin fillets. If you desire you can season them with salt and pepper.

Step 2: Put a slice of prosciutto on top of the each veal fillet.

Step 3: Place 1 large or 2 small flat sage leaves on top of the prosciutto and secure with a toothpick if desired add to skillet with olive oil and butter prosciutto side down. Or you can do step 4 first if you desire before adding to skillet on medium heat cooking for about 3 minutes each side.

Step 4: Optional: Dredge the fillets in flour and shake off excess.

Step 5: Place the dredged fillets with prosciutto side down, in a skillet with oil and melted butter on medium heat. Cook for about 3 minutes each side.

Step 6: When the fillets are cooked remove from pan, set aside and start optional sauce.

Step 7: Optional: Add white wine, butter and some add chicken broth, but white wine and butter are great to add. Turn on high and scrap pieces in the pan-leave them for the sauce, but loosen them from the bottom.

Step 8: Optional: Add the fillets back into sauce for a few minutes to soak up the goodness, let the sauce reduce down and fillets heat through. Then serve with a side of rosemary potatoes or pasta. Mangia!

Shamokin Drum Corps Photo taken from 1939. Shamokin 75th Anniversary book. Drum Corps of Shamokin Guards, organized in 1854. Enlisted for service in Civil War, April 22, 1861. On the extreme right, two standing and one seated are three brothers of a famous family of drummers, William, Henry, and Nathan Startzel. Seated on the lower left, William Taylor, later director of Zouave Drum Corps, Lincoln Post.
