The Referend is exclusively dedicated to the production of spontaneously fermented beers, as practiced by ancient cultures and ushered into modernity by the lambic brewers of Belgium's Pajottenland. These beers are:

Three new Cellar Bar wildnesses!

The Way of All Flesh 2024
is our spontaneously fermented pale wheat ale conditioned on the highest performing fruits from a given harvest year. For 2024 that was local yellow & white nectarines and Chambourcin grapes. On draft, bottles to come.

Quelle Metamorfosis 2023
is our spontaneously fermented golden ale conditioned on estate grown organic/unsprayed elderflower blossoms, 4 years old. On cask, different vintage bottles to come for Rememberers.

King, Queen, Knave 2025
is the first appearance of any iteration of our spontaneously fermented gruit, brewed four years ago with estate yarrow, chamomile, and honey locust pods, local honey, and here conditioned on 2025 harvest wild carrot flowers. On cask.

Last gold of the season, new beer for the season.

Mont Sainte-Victoire Spruced '24-'25 is on draft in the Cellar Bar where it can be partaken of, or taken in hand to the out of doors to the biergarten and vineyard where the flowers and brightest new green leaves are, and where the birds know nothing of current events and are quick to let you know so. It can be partaken of there too.

Brewed in the spring of 2024 with local pilsner malt and quite local organically-grown raw buckwheat and spelt, spontaneously open fermented on estate spruce tips, aged for one year in one neutral oak puncheon, and conditioned on the next season's spruce tips from the same trees.

You can get it by the porrón if you're willing to wait for the foam to subside.

And as it's likely to be in the 80s (F) this week, and 30s (F) this evening, we're paddling away at our last golden ale brewday of season K.

Year Five of The Rememberers is here! We've got so many wonderful people to thank for renewing for five years of membership.

As such, there are not very many spots available, and we still need to compile our physical tasting room waitlist with our waitlist on our Materials page. As we do so, but before we finalize the 2026 Remembership in coming weeks, is your chance to join the waitlist for a shot at joining The Rememberers.

The 2026 Remembership includes an omakase case (you choose between 12x375ml or 6x75cl, we'll choose great past and present bottles), and a 6x75cl bottle case of all Rememberers exclusive, $260 (now all-inclusive) for the year. Other benefits and private invites included.

Heads-up that if you were a past Rememberer that lapsed in prior years, you'll need to rejoin the waitlist in order for us to know your desire to renew. Once back in, you'll accrue any bonus bottle status based on total years of membership.

Berliner Messe: Agnus Dei 2020 is being released today in our Cellar Bar.

This 2020 harvest edition was brewed in the fall of 2017 and 2019, and was refermented with NJ Vidal Blanc grapes with nine months of skin contact. Bottled Sep. 24, 2021, horizontally bottle conditioned for 4.5 years prior to today's release.

Hotly debated whether our label for A Ghost Is Born is better suited for Valentine's Day or Halloween, but we'll go with it!

A Ghost Is Born 2021 Reserve
is the newest vintage (bottle release forthcoming), pouring this weekend in the Cellar Bar. Our spontaneously fermented pale wheat ale aged a staggering 41 months on second-use NY Morello cherries in a single puncheon for the loveliest cherryskin tannins imaginable.

A recent study (based on a 2014 study from the same lead author, Remco Kort) showed that probiotics consumed by one person are readily transmitted to another via 8+ seconds of kissing. Probably best to split the bottle and render supplementary the kiss, but still good to know.

Amy dreamed us up a beer. In the dream the beer was blue and on the handpumps and customers were serving themselves into dirty stanges (nightmare adjacent). "It was blueberries and cherries and called Blühkriek." How could we not?

Blühkriek is a mulled (hot) spontaneously fermented ale with NJ blueberries and NY cherries, conditioned on vanilla and mulled with cinnamon and cloves. Opt. addition of PA rye whiskey or rum.

Please email any such dreambeers and we will see if we can make them accord with our Dream Fulfillment Program. Real dreams only from the sleepsome terroir of divine nonsense, please.

For this whole frigid weekend we'll have vintage barleywine by the glass (rather than the usual bottle-only status of our Barleywines of the Commonwealth):

Our first batch of spontaneously fermented ~barleywine is finally ready to bottle this month, after four years in barrels (first bourbon, then port).

Another single port barrel of barleywine brewed with very local organic Violetta barley was bottled in September and is slated for 2026 Rememberers, so 2025 Rememberers please keep an eye out for priority renewals. All others welcome to join the waitlist and hope for the best!
