Gianni's Fine Foods Gianni's is a small-batch, hand-bottled, gourmet food company specializing in the production of barrel-aged, balsamic vinegar products.

We proudly engage in all of our production here in the state of Oregon in our licensed facility in Northeastern Oregon. Gianni's is a small-batch, hand-bottling facility, specializing in the hand-bottling of new and exciting recipes, in the hopes that we can change the way people eat, by steering them in the healthy direction of using quality, tress-free olive oils and balsamic vinegar products. Just a couple quick things I need to mention. 1st, I will be unavailable starting tomorrow the 21st until late October. (I'm having surgery and recovery time puts me into mid or late October before I can return to work. Thank you for your patience and understanding. I will of course still be offering Christmas mix and match $21 12 oz bottles for $100. I will be delivering all November to all areas where I do market.
2nd: I'm pretty sure I really don't need to touch on what my traditional dark is, but I just had a customer basically not order from me because we're being honest about what we actually sell instead of the myth about products being aged. Folks, if it's not an Italian consortium approved bottle, then we in the business refer to EVERY OTHER BALSAMIC BEING SOLD IN STorES is called commercial grade otherwise known as a vinegar glaze. It is thickened, sweetened, and darkened. (If it actually had ANY aged must in it, it certainly wouldn't cost $20. Consortium approved balsamics average $150 to $200. You'll know one when you see one as it is bottled by this government entity in THEIR glass, a 7? Oz or so baseball shaped bottle with a 3 inch neck. It comes in a beautiful folding box and comes with a wonderfully informative booklet. On the outside of the box is a proud Italian cowboy. Anyway how other companies manage their ingredient declaration is on them. I list what's in it bc I don't want you to die from eating something I didn't list.

Strawberry Balsamic Pepper Jam---YUM! A delicious spicy jam that you will love! This is not a jam you want to consume in huge amounts all at once. (Rather than slathering it on toast so it goops off the edges, try spreading a thin layer on a ham and cheese sandwich.) Pair it up with creamy cheeses. This recipe makes a whooping eight jars of jam. It will keep for up to a year on the shelf. A jar and a wedge of cheese would be a great hostess gift.
Ingredients:
7 cups sugar
5 cups coarsely chopped strawberries (from about 3 farm stand boxes)
1/4 cup Gianni's Traditional balsamic vinegar
1 heaping teaspoon freshly ground black pepper
One (1.75-ounce) package regular powdered fruit pectin
1/4 teaspoon unsalted butter
*Measure the sugar into a large bowl and set aside.
*Combine the strawberries, balsamic vinegar, and black pepper in a large, heavy-bottomed pot. Whisk in the pectin until dissolved. Add the butter and bring the mixture to a boil over medium-high heat. Add the sugar all at once and return the mixture to a boil, stirring constantly. Boil hard for one minute.
* Remove the pot from the heat and skim any foam from the surface of the jam with a cold metal spoon. Ladle the jam into hot sterilized jars and process them in a hot water bath for 10 minutes.
