Yukon Golden mashed potatoes with Honey BBQ Bacon Wrapped chicken

2 lb chicken tenders
1lb thick cut bacon

2 tbsp grape-seed oil
1/2 tbsp paprika
1/4 tbsp crushed red pepper
2/3 cup Louisiana hot sauce
1/4 tbsp Worcestershire sauce
1/2 tbsp salt
1/3 tbsp black pepper
1/2 tbsp Cajun seasoning
1 cup Dijon mustard
1/2 cup hickory smoked BBQ sauce
1/2 cup honey


Lightly coat chicken in oil
Rub in dry seasonings
Mix wet ingredients in a separate bowl
Dredge chicken through wet ingredients
Wrap bacon around each tender

Bake at 425 degrees for 30 minutes

Potatoes:

2 cup of whole milk
5-7 Yukon Golden potatoes sliced 1/2 inch thick
Fresh minced garlic
1/2 tbsp black pepper
1/2 brunoise cut yellow onion
2/3 tbsp salt
1 stick unsalted butter
1/4 tbsp fresh Thyme

In a nonstick pan, bring milk up to a gentle frothy boil stirring the sides to prevent sticking

Add in melted butter and bring to boil

Mix in brunoise cut onion, garlic, thyme, and black pepper

Gently add potatoes and reduce heat, cook uncovered for 15 minutes.

Use whisk or mixer to combine and mash potatoes
