ZUZU’S PRALINE LACE COOKIES

THE FIRST PART OF THIS COOKIE RECIPE IS PREPARED ON THE STOVE TOP, for a thin crisp praline cookie.
Preheat oven to 350°.

In a medium size saucepan combine the following:

One cup dry Zuzus Praline Mix
1/3 cup light corn syrup
1/2 stick salted butter 
Bring these ingredients to a boil, stirring constantly, and continue to boil rapidly for one minute. 
Immediately add 1/3 cup of all-purpose flour and 2/3 cup very finally chopped pecans.
Blend well and cool slightly. 
Spoon one and a half teaspoons of mixture onto a parchment lined cookie sheet approximately 3 inches apart.

Cookie spread is very wide as they are baking.

Bake 10 to 12 minutes, turning once halfway through baking.

Cookies are done once they are golden brown, and bubbling begins to slow.

Cookies will be very pliable directly from the oven, but will crisp up as they cool.

Leftover dough may be saved for later, but will become very thick.

ZUZUS OLD FASHIONED PECAN FILLING

1. Follow the directions in the recipe below to make the creamy delicious caramel sauce.
Cool completely. Best if refrigerated overnight.
2. Finely chop 2 cups of pecans.
Add cold caramel sauce, 1/2 cup at a time until you get to a spreading consistency that you prefer.
3. This filling can be used on baked layers or Pepperidge Farm poundcake.
4. By adding finally chopped coconut to the pecan filling, you will get German chocolate filling. *** leftover sauce may be frozen up to six months
