454.5 lbs pre cooked weight of pork butts for a fundraiser in Houma, LA tomorrow. Seasoned with Baldman's Southern Pit BBQ Seasoning and BBQ Rub. Should end up with about 250 lbs finished weight after cooking and quality control sampling. Going to finish with about 8 gallons of Baldman's Southern Pit BBQ Original BBQ sauce tomorrow as we pull the pork.

It has been a challege today with the gusty and swirling wind and cooler temps but we are about half way through and looks like the wind is starting to die down a bit and the first sample was excellent!!

My version of a croque madame, prosciutto, Havarti cheese, two eggs over hard, lettuce, drizzled with a balsamic reduction, on two slices of toasted Evangeline Maid bread. Delicious way to break the fast on a Saturday morning.

A few food pics that I have missed starting with wing flats and drumettes grilled with Baldman's new seasoning blend that we are working toward perfecting along with boneless "wings" seasoned the same but dusted with panko and done in a conventional oven and smashed potatoes with olive oil, butter, SPG, and parmassan cheese.
